Episode 3: Whole30 - Day 2 - Groundhog Day...ugh

 

Day 2...again!

OMG!  I have a lot to learn!

Not only did I put ham on my salad on Day 1 but on that same day I went to the grocery store and bought bacon and sausage and now I realize they BOTH have sugar!  

This Whole30 approach to eating is challenging me to really look at labels because the only thing I've ever glanced at on the labels was how much protein the food contained.  I never even noticed what was in the ingredients, especially when it was just 1 thing that looks like it should just have 1 thing in it...the THING that it is! 

Bacon has bacon in it...ham has ham in it, right?!

...wrong!

The way the food is processed just wasn't even on my radar but I'm learning and I want to give this my best effort so here we are on Day 2...again!

I do love how my omelet's sautéed veggies makes my house smell so yummy! 

Leftovers for lunch and my new favorite snack of guacamole and chips...errr....carrots!  My mouth loves the crunch and my brain is in full delusion mode by imagining it's getting chips with that guac!

Prior to today I didn't even know what Coconut Aminos were.  Apparently it's a soy-free alternative that tastes similar to soy sauce.  I was just excited to have something to put on my chicken. 

To say that I don't cook is the greatest understatement possible.  It's not that I can't cook but I really don't enjoy the process.  It feels like a means to an end and at the end I might or might not have something yummy to eat but I'll definitely have a kitchen to clean so the gamble just doesn't seem worth the effort and the one absolute guarantee that I'll have a mess to clean up! 

The having to cook part was my greatest hesitation about starting this Whole30 challenge because it's just me...being a single mom, I don't have someone else who can pick up the slack when I'm too tired to think through the options and prepare a healthy dinner at the end of a long day.  Oddly enough, this is exactly WHY I decided to start this challenge because I need more energy to show up for all the parts of my very full life!

To reward myself for a successful Day 2, I made this delicious dessert!!!  

Crossing my fingers for this being my last Groundhog Day!
